Over the past few years, our family has become a lot more conscious about the foods we eat by making little changes, and healthier food choices over time. The biggest change by far has been trying to incorporate a lot more whole foods into our meals and the thing I love most about summer is the abundance of fresh produce. This year we planted the seeds of change into a vegetable garden so the kids can know where their food comes from and how it is grown. The kids have really enjoyed experiencing both the hard work and patience it takes to produce healthy, nutritious food.
We planted all kinds of vegetables we love to eat like Kale, Cucumbers, peas, broccoli, peppers and our favourite… okay well my favourite; Brussels Sprouts!
As a busy mom, I passionately try to serve healthy, quality meals to my family, but long summer days means more often than not; I easily loose track of time in our overly scheduled summer life trying to make sure we enjoy every drop of sunshine.
It also means you aren’t going to find me wasting precious sunshine time inside cooking and heating up the house. We love to Barbecue outside not only to get the most out of the beautiful weather, but it also helps keep the house nice and cool. Because I don’t like to cook every day, when we do barbecue, I try to over cook so we have extra protein on hand for quick summer meals.
